Pumpkin Spice & Everything Nice

Fall has finally hit me and I’m getting into the pumpkin craze like everyone else. I went to the commissary and bought a small pumpkin to carve. My husband has never carved a pumpkin in his life, so this will be his. We figure the guts will be a nice sensory project for Nadia. All this will be on another post. Today is about Pumpkin Spice Bread! Yummy!

That slice is a bit smashed! Haha! I was so excited that I cut right into it to get a slice of delightful bread pumpkiny goodness! The reason why I was so excited was because the whole house smelled freaking delicious! Like I had lit a fall Yankee Candle and let it burn all day. So by the time the 80 minutes passed, my mouth was watering! I put a bit of butter on it, and it makes it just a bit more tasty! Nom nom nom nom!! Even my husband enjoyed it, and he hates pumpkin… everything!

So here’s what you need:
1 3/4 cups of flour
3/4 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1/4 tsp ginger
1 1/2 cups sugar
1 tsp baking soda
1 15 oz can of pumpkin puree
2 eggs

First things first. Preheat that oven to 325°f.
Next, mix all the dry ingredients together.

Once blended, set aside. In another bowl, crack the two eggs and whisk until frothy.

Add in the can of pumpkin puree and whisk til your hearts content.. or until smooth. 🙂

Start adding in the dry into the wet, little by little.

Once you’ve done that, it might look like this…

Grab your 9×5 bread pan and grease it up, or go the no-mess route and do what I did!

Isn’t that neat?!? This nonstick stuff is amazing! I use it for everything! Now, pour your bread batter in that pan and toss it into that preheated oven for 1 hr 20 min!

When it comes out it will look like this…

Ooohhh, yummy!! Now, if you used that Reynolds nonstick foil, you’re in luck! Just pick up the sides of the foil and lift it right out of that pan! Yay! No mess!
